Porcupine Meatballs

I love the versatility and convenience of ground beef, don’t you? We are fortunate to be able to get farm-fresh beef for an excellent price, and just a few weeks ago, we restocked our mostly-depleted freezer with 100 pounds of hamburger. Yes, 100 pounds!  It shouldn’t be too hard to guess what will be starring on the menu for the next few weeks. 😉

This recipe for Porcupine Meatballs is one of my favorite ways to use ground beef.

Porcupine Meatballs

Ingredients
  

  • Meatballs:
  • 2 lbs. ground beef
  • 2 eggs
  • 1 1/4 c. rice uncooked
  • 1 small onion chopped
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. garlic powder
  • Sauce:
  • 1 29oz can tomato sauce
  • 1 1/2 c. water
  • 1/4 c. brown sugar

Instructions
 

  • Combine all ingredients for meatballs. Shape into 12-14 balls; place in large pan.
  • Combine ingredients for sauce; pour over meatballs.
  • Bring to a boil; reduce heat and simmer, covered, for one hour, or until done. (Add a small amount of additional water if sauce becomes too thick.)

  2. My mom used to make these all the time. I saw someone make these on tv the other day and thought…I need a recipe. I found your blog and liked the looks of your recipe. I love the simplicity of this recipe. It is easy to put together and very tasty! I added some finely diced mushrooms and red peppers too!

    I remember loving these as a kid and was thrilled to find this. My 7 year old son asks for this all the time now and licks his lips and says something I have no idea how to spell but means super yummy!
