I love the versatility and convenience of ground beef, don’t you? We are fortunate to be able to get farm-fresh beef for an excellent price, and just a few weeks ago, we restocked our mostly-depleted freezer with 100 pounds of hamburger. Yes, 100 pounds! It shouldn’t be too hard to guess what will be starring on the menu for the next few weeks. 😉
This recipe for Porcupine Meatballs is one of my favorite ways to use ground beef.
- 2 lbs. ground beef
- 2 eggs
- 1 1/4 c. rice, uncooked
- 1 small onion, chopped
- 2 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. garlic powder
- 1 (29oz) can tomato sauce
- 1 1/2 c. water
- 1/4 c. brown sugar
- Combine all ingredients for meatballs. Shape into 12-14 balls; place in large pan.
- Combine ingredients for sauce; pour over meatballs.
- Bring to a boil; reduce heat and simmer, covered, for one hour, or until done. (Add a small amount of additional water if sauce becomes too thick.)
