Today’s featured recipe is Peachy Cobbler, a simple but yummy dessert that can be made without heating up your oven. Served warm and topped with vanilla ice cream or whipped topping, it makes a delicious homemade treat!

Ingredients

  • 24 oz. frozen peaches, thawed and drained
  • 1 1/3 c. sugar, divided
  • 2 eggs
  • 1/2 c. butter, softened
  • 1 c. flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. nutmeg

Directions

  • Place fruit in greased 5-qt. slow cooker. Sprinkle with 1/3 c. sugar.
  • In medium mixing bowl, combine eggs, butter, flour, 1 c. sugar, baking powder, and nutmeg with mixer. Spread batter over fruit.
  • Cover and cook on HIGH for 3 hours or until cake is done. (If condensation forms on the lid during cooking, place a paper towel between the top of the crock and the lid to absorb moisture.)

    • Hi Candy, I have used canned peaches (without the syrup, of course), but I just eyeballed the amount. You may also need to reduce the sugar since the canned peaches are already sweeter than fresh. HTH
